It's FREEZE-DRIED candy time!
What's the Process?
First, the candies are frozen to a very low temperature. Then, a high vacuum is applied, turning the ice from the frozen candies into vapor, bypassing the liquid phase. This process not only removes moisture from the candies but also creates a unique, light, and crunchy texture that can be quite different from the original candy while preserving their flavor and nutritional value. As a result, freeze-dried candies have an extended shelf life.
I've tried a few different types of gummies: sourworms, gummy bears, and peach rings. Gummies take a very long time to process—at least 12 hours! Other types of candies don't take as long. For instance, caramel and chocolate buttons take three to four hours, and they are tasty!
My journey into the world of freeze-drying has been a fascinating one. I've tried my hand at freeze-drying various candies, and I'm excited to share my experiences with you. What's it taste like?
Freeze-drying accentuates the tangy and fruit flavors of the candies. It's a fantastic taste sensation. I've freeze-dried our caramels, and WOW, it's like eating caramel cotton candy. I'm still working on the texture, so it's not on the sales floor. It's coming soon!
